PAVÉ D’AFFINOIS
France
The pride of cheese maker Guilloteau from the Loire department. Pavé gets its name from the shape of a cobblestone, but that’s where the similarity ends. The addition of cream gives the cheese a spreadable, soft texture and a refined, full-bodied flavor with a hint of mushrooms. Delicious on a cheese board, with bread and crackers!
SEASONAL CHEESE – HAYFLOWER CHEESE
Netherlands
The cheese is encased in an aromatic rind made of hay and fine herbs, such as sweet clover, which gives it a slightly sweet, spicy, full-bodied flavor and a unique aroma. The cheese is more mature or extra-mature than young. It is a flavorful specialty that melts well and is perfect for a cheese platter or in hot dishes.
BREBIOU
Southern France
A sheep’s milk cheese from southern France with a very soft and creamy texture. This cheese, originating from the Pyrénées-Atlantiques region, is made from pasteurized sheep’s milk and is characterized by a creamy, buttery texture and a mild, clean flavor. The paper-thin, edible rind with a light white mold gives the cheese a refined character and added depth. Thanks to its mild and approachable flavor, it is an ideal dessert cheese that pairs well with bread, in salads, or with a suitable glass of wine.
MUSCAT WINEMAKER
France
A small, Münster-style cheese that is rubbed with the Marc de Muscat distillate during aging. This dessert cheese, made from whole pasteurized cow’s milk, has a creamy texture and a distinct character. Washing it with the aromatic distillate develops a characteristic orange-red, slightly sticky rind and creates a spicy, aromatic flavor with subtle fruity notes. The cheese is soft and creamy on the inside and is best enjoyed on a cheese platter, especially paired with sweeter accompaniments or a suitable glass of wine.
BLAUE GRUBE
Denmark
A mild, organic Danish blue cheese produced by Thise Mejeri in Jutland. This 60+ cheese is made from pasteurized organic Jersey milk (cow’s milk), which gives it an extra creamy, smooth texture. During a maturation period of approximately 16 weeks in the caves of Hjerm, the cheese develops a soft, mild flavor with refined blue veins. After production, the cheese is coated with a thin layer of wax, which provides protection during maturation and helps preserve its creaminess while the flavor deepens further.
